Scotch Eggs

Our Scotch Eggs have been called the finest in the world – this is how you do it:

INGREDIENTS

6 Medium Eggs

2 Egg Yolks

500g Flour

500g Panko Breadcrumbs

I Dessert Spoon Mustard Powder

2 Dessert Spoons Smoked Paprika

Salt & Pepper Seasoning

500 grams sausage meat – either your favourite sausages skinned or bought sausage meat.

METHOD

Boil Eggs for seven minutes, then plunge into iced water, peel.

Combine the flour, mustard, smoked paprika and seasoning.

Coat eggs with flour mixture

Cover eggs with sausage meat (flatten sausage meat to twice the size of your egg, keep moist to prevent sticking to surface)

Coat sausage meat with egg yolk

Roll in Breadcrumbs

Place egg in fryer at 170c for around five minutes or until golden. You can fry in a pan too.

Allow to cool then eat – Yummy!
