Barbecued Chicken Brazilian Style

The best marinade yet!

This marinade is simple to make and adds real flavour to the chicken.



900 g Boneless chicken thigh (skin-on if possible)

2 Lemon zest and juice

1 tbsp Smoked paprika

1 tbsp Mild piri-piri sauce

2 tbsp Soft brown sugar

3 Clove of garlic crushed

3 tbsp Extra virgin olive oil

2 tbsp Coriander, finely chopped


1Mix together all the ingredients, season chicken and coat thoroughly, add more oil as needed to cover chicken. Refrigerate until using.

2To cook: Remove chicken from marinade place on medium grill until thoroughly cooked. If you are barbecuing a temperature probe is advisable. The chicken should be 75C at the meatiest part.

Some recipes will tell you to marinade for 2 to 3 hours that is not nearly enough time to impart real flavour. 12 hours is good 24 hours is better.

Brazil because of the climate has a barbecue tradition - you can cook this on a barbecue or if it’s the depth of winter you can cook on the grill

The best meat to use is boneless chicken thighs.
